Tehari

Ingredients – Beef or mutton – 1 kg, Rice – 600 grams, Mustard oil – 250 grams, Black cardamom – 1pcs, Bay leaves – 4pcs, Onion – 250 grams, Garlic paste – 2 tablespoons, Ginger paste – 2 tablespoons, Water – 1,000 gms, Green chilies – 12/13 pcs, Desi Shad roasted cumin powder – 1 tbsp, Salt to taste, Dehi Shad  Tehari masala – 1 tbsp, Sugar – 1/2 tsp, Milk – 250 gms, Keora water – 1 tablespoon.


Prepared method – take a pan and put 250 grams of mustard oil in the pan, when the oil gets a little hot, add black cardamom and bay leaves. If the smell of bay leaf and cardamom goes into the oil, then add onion to it. The onion should be lightly fried. After that add garlic paste and ginger paste and mix this masala very well with a little water. When the masala is well mixed, add the washed meat, 5/6 green chilies, enough salt, 1 tablespoon of Desi Shad roasted cumin powder, and 1 tablespoon of Desi Shad Tehari masala. And the meat should be mixed with spices very well. Cook on medium-low heat covered with a lid until the meat is slightly cooked, do not add any water at this stage. After 30 minutes, open the lid and if the meat is slightly cooked, add 250 grams of water and boil the meat well. Wash the rice well and soak it for 30 minutes. After 30 minutes the rice should be drained. When the meat is cooked, the meat should be removed from the broth, and the rice should be fried very well in the broth. When it is fried well, add 750 grams of water and 250 grams of milk, And the amount of salt should be given. In this 5/6 green chilies should be given. Keep the lid open and wait until the rice and water are equal. If the rice and water are equal, then the meat should be added. Then meat and rice should be mixed very well. Add 1 tablespoon of water to it. Then mix everything well, cover with a lid, and keep the stove on low heat for 10 minutes. After 10 minutes open the lid and add sugar. Mix everything well again. After that, keep it for 10 minutes again. After 10 minutes turn off the stove and now serve the delicious Tehari.
